Since September is Better Breakfast Month, we wanted to share a healthy breakfast casserole recipe .. Turkey Sausage and Tomato Breakfast Casserole.
Ingredients:
- 1 tbsp avocado oil
- 1 yellow onion
- 1 tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- 16 oz ground turkey
- 12 eggs
- 1 cup fresh chopped tomatoes (more for topping)
- ½ cup crumbled goat cheese
Directions:
- Preheat oven to 350F and grease a 9×13 casserole pan
- Dice the yellow onion
- Heat 1 tbsp oil in a frying pan over medium-low heat and add the onion
- Sauté the onion for 4 minutes tossing frequently
- Add salt, pepper and garlic powder to the onions and sauté for another minute
- Add ground turkey to the pan and increase heat to medium
- Cook ground turkey, breaking up into small crumbles for 6 minutes
- While the turkey cooks, crack 12 eggs directly into the casserole dish and scramble
- Add chopped tomatoes to the pan with the turkey and onions and cook four more minutes
- Remove the pan from the heat and allow the mixture to cool slightly
- Once cooled stir the turkey and tomato mixture into the eggs in the casserole dish
- Sprinkle crumbled goat cheese over top and stir gently
- Optional: add tomato slices on top
- Bake in the oven at 350F for 45 minutes
- Allow to cool slightly and then slice into squares
