Since September is Better Breakfast Month, we wanted to share a healthy breakfast casserole recipe .. Turkey Sausage and Tomato Breakfast Casserole.


  • 1 tbsp avocado oil
  • 1 yellow onion
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 16 oz ground turkey
  • 12 eggs
  • 1 cup fresh chopped tomatoes (more for topping)
  • ½ cup crumbled goat cheese



  1. Preheat oven to 350F and grease a 9×13 casserole pan 
  2. Dice the yellow onion
  3. Heat 1 tbsp oil in a frying pan over medium-low heat and add the onion
  4. Sauté the onion for 4 minutes tossing frequently
  5. Add salt, pepper and garlic powder to the onions and sauté for another minute
  6. Add ground turkey to the pan and increase heat to medium
  7. Cook ground turkey, breaking up into small crumbles for 6 minutes
  8. While the turkey cooks, crack 12 eggs directly into the casserole dish and scramble
  9. Add chopped tomatoes to the pan with the turkey and onions and cook four more minutes
  10. Remove the pan from the heat and allow the mixture to cool slightly
  11. Once cooled stir the turkey and tomato mixture into the eggs in the casserole dish
  12. Sprinkle crumbled goat cheese over top and stir gently
  13. Optional: add tomato slices on top
  14. Bake in the oven at 350F for 45 minutes
  15. Allow to cool slightly and then slice into squares
